Pizzeria Hood Cleaning in New Jersey

Wood-fired and coal-fired ovens are not on the same cleaning schedule as the rest of your kitchen, and NFPA 96 treats them as a separate system entirely.

Overview

Pizzerias in New Jersey

A pizzeria is the one kitchen where the fire code changes because of what you burn, not just how much you cook. Under NFPA 96, a system serving solid fuel appliances is inspected monthly - the most frequent interval in the standard, and far more often than the gas line beside it.

Why Solid Fuel Is Treated Differently

Monthly inspection, not quarterly

NFPA 96 sets inspection frequency by cooking volume and fuel type. Solid fuel sits at the top of that schedule at monthly, regardless of how busy the restaurant is.

Creosote, not just grease

Burning wood and coal deposits creosote in the flue on top of cooking grease. It ignites at a lower temperature than grease and does not respond to the same degreasers, so it is removed mechanically.

A separate exhaust system

NFPA 96 requires solid fuel cooking to exhaust through its own system, independent of the hoods serving grease-producing gas or electric appliances. Two systems means two cleaning records.

Spark arrestor and flue checks

Solid fuel exhaust carries live embers. We check the spark arrestor and the flue run on every visit and note anything that needs attention in the report.

Scope of Work

What a Pizzeria Visit Covers

  • Hood, plenum and filters over the gas line, on your normal volume-based schedule
  • The solid fuel flue, scraped rather than washed, on the monthly interval
  • Spark arrestor inspection and cleaning
  • Rooftop fan and grease containment
  • Separate documentation for each system, the way the fire marshal expects to see it
Detail

Two Schedules in One Kitchen

Most pizzerias run solid fuel and gas side by side. NFPA 96 does not put them on the same interval, which is why a single annual visit leaves half the kitchen out of compliance.

What it serves Category NFPA 96 inspection
Wood-fired or coal-fired ovenSolid fuelMonthly
Charbroiler or wok rangeHigh volumeQuarterly
Gas deck oven, fryer, standard lineModerate volumeSemiannually
Seasonal or very light useLow volumeAnnually

Those are inspection intervals. Cleaning follows whenever an inspection finds the system contaminated — in a busy pizzeria the solid fuel flue is normally cleaned at every monthly visit.

In Practice

What Goes Wrong in Pizzerias

The failure we see most often is a wood oven tied into the same duct as the gas line. It passes unnoticed for years because nothing looks wrong from the kitchen floor — then an inspector traces the duct run and the whole system is written up at once.

The second is a spark arrestor nobody has looked at. Solid fuel exhaust carries live embers, and the arrestor is the only thing between those embers and a duct coated in creosote and grease. When it blinds over with soot it stops doing its job and starts restricting airflow, which pushes heat and smoke back into the kitchen.

The third is simply the interval. A pizzeria owner who booked an annual cleaning in good faith is eleven months out of compliance on the oven flue and usually has no idea.

Pizzerias — Common Questions

How often does a wood-fired pizza oven hood need cleaning in New Jersey?
NFPA 96 places systems serving solid fuel cooking appliances on a monthly inspection interval - the most frequent in the standard. Gas-fired equipment in the same kitchen follows the normal volume-based schedule, which for most pizzerias means quarterly. That is why a pizzeria often ends up with two different cleaning intervals running at once.
Does my wood oven need its own exhaust system?
Yes. NFPA 96 requires solid fuel cooking operations to exhaust through a system separate from the one serving grease-producing gas or electric appliances. If your wood oven currently shares a duct with the rest of the line, that is a finding a fire marshal can act on, and we will document it.
What is creosote and why does it matter?
Creosote is the tar-like residue left by burning wood or coal. It builds up in the flue alongside normal cooking grease, ignites at a lower temperature than grease alone, and burns hotter. Degreasers do not lift it, so it is scraped out mechanically.
My pizza oven is gas-fired. Does the monthly rule apply to me?
No. The monthly interval applies to solid fuel - wood and coal. A gas-fired deck or conveyor oven follows the same volume-based schedule as the rest of your kitchen. We will tell you which category you are in before quoting anything.
Do you clean the oven itself, or only the exhaust?
We clean the exhaust side - hood, plenum, filters, the flue run and the fan. The oven chamber and its firebrick are the oven manufacturer's or your oven technician's territory. What we remove is everything the smoke and grease pass through after it leaves the oven, which is what NFPA 96 covers and what a fire official inspects.
What does a fire official actually look at in a pizzeria?
Three things beyond the normal hood check: whether the solid fuel system exhausts separately from the gas line, whether a spark arrestor is fitted and clear, and how recently the flue was cleaned. Our report addresses all three by name so there is nothing for an inspector to have to ask about.
